Ingredients;
- For an 8 inch (20 cm) cake:
- 175g (6 oz) self-raising flour sifted
- 1 tsp baking powder
- ¾ tsp ground cardamom
- 1 orange peeked and skin taken off each wedge
- 175g (6oz) very soft butter
- 175g (6 oz) caster sugar
- 3 large eggs
- 3 tsp vanilla essence
- To decorate
- Orange peel slices
- Christmas icing decorations
Method:
- Cream butter and sugar
- Beat in the eggs and the vanilla essence
- Mix the flour, baking powder, cardamom and orange zest in a large bowl. Add to the rest of the ingredients and mix with an electric hand mixer until well combined and very smooth.
- Add the cake batter to a buttered cake tin and gently level with a spatula. Bake for 30-35 minutes until a skewer comes out clean.
- Allow to stand for 5 minutes before turning them on to a wire rack to cool.
- Top with whipped cream, orange peel and Christmas decorations
